The Chasam Sofer writes a public pastoral letter to the community of Trieste admonishing them to immediately reform their Pesach matzah-baking practices, which were reported to be severely deficient. He instructs them to adopt the Pressburg supervision model with dedicated knowledgeable mashgichim and unannounced inspection rounds, to strictly observe the dough-size limitation, to ensure the entire baking process takes no more than two to three minutes, and to prohibit absolutely the baking of matzah ashirah with fruit juice mixed with water.
