The Chasam Sofer distinguishes between negi'ah (contact), which requires direct touch and is blocked by an intermediary cloth, and lekichah (applied force), which passes through any intermediary. Therefore, a non-Jew touching wine through a cloth does not render it forbidden, but a non-Jew treading wine through a cloth-wrapped stick does render it forbidden, since his koach passes through the cloth and lekichah through an intermediary is still lekichah.
