The Chasam Sofer rules that the Stampfen community's enactment requiring two shochtim for knife and lung inspection is a praiseworthy safeguard that cannot be annulled by any beis din so long as its reason persists, per the Rambam in Hilchos Mamrim. Furthermore, a shochet who violates this enactment after warning may be disqualified from performing shechitah going forward.
